FIVE CHEESE PIZZA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Butler Estate in Irving, Texas in 1988.

Ingredients
  • 1 pizza crust unbaked
  • 2 tablespoons pine nuts
  • 2 tablespoons olive oil plus additional for pan
  • Cornmeal for pan
  • 1 teaspoon white wine vinegar
  • 1/2 teaspoon minced garlic
  • 1 small zucchini thinly sliced
  • 1/3 cup red onion very thinly sliced
  • 3/4 cup provolone cheese grated
  • 1/8 teaspoon coarse salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup grated mozzarella cheese
  • 1/3 cup slivered Italian cheese
  • 1/4 cup gorgonzola cheese crumbled
  • 6 tablespoons parmesan freshly grated
  • 1 tablespoon fresh chopped parsley

Directions
  1. Heat small skillet over low heat until hot to the touch.
  2. Add pine nuts then reduce heat to very low.
  3. Toast pine nuts shaking pan frequently until evenly golden about 2 minutes then set aside.
  4. Heat oven to 500 then oil a pizza pan as necessary and sprinkle with cornmeal.
  5. Combine 1 tablespoon oil, vinegar and garlic in medium bowl then add zucchini and red onion.
  6. Toss to coat then place in prepared pan and brush with remaining oil.
  7. Sprinkle half the provolone evenly over dough leaving a 3/4" border.
  8. Top with even layer of zucchini mixture then season with salt and pepper.
  9. Add remaining provolone all mozzarella, Italian cheese and gorgonzola and half the parmesan.
  10. Sprinkle with additional salt and pepper then bake 15 minutes.
  11. Scatter pine nuts evenly over surface then bake 5 minutes longer.
  12. Sprinkle with remaining parmesan and the parsley then serve immediately.
