MARBLE LOAF CAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Butler Estate in Irving, Texas in 1988.

Ingredients
  • 1-3/4 cup sifted all purpose flour
  • 1-1/2 cups granulated sugar
  • 2-3/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1-1/2 squares chocolate melted
  • 3/4 cup milk
  • 3 egg whites unbeaten
  • 1/3 cup shortening
  • Frosting:
  • 1/3 cup evaporated milk
  • 1 cup granulated sugar
  • 1 stick oleo
  • 1/2 cup chocolate chips

Directions
  1. Sift dry ingredients together in bowl then add shortening and 1/2 cup milk.
  2. Beat 2 minutes with electric mixer.
  3. Add remaining milk, vanilla and egg whites then beat two more minutes.
  4. Divide batter in half and add melted chocolate to 1/2 of the mixture and blend.
  5. Spoon batter alternately in pan greased and lined with waxed paper.
  6. Cut batter threw in zig zag pattern with knife for marble effect.
  7. Bake at 375 for 55 60 minutes then remove from pan and cool on rack.
  8. Frost with chocolate frosting.
  9. For frosting combine milk, sugar and oleo in saucepan and cook 2 minutes.
  10. After mixture begins to bubble remove from heat and stir in chips then beat until melted.
  11. Cool completely then spread over cake.
