How to make it

  • in skillet brown shanks on all sides in small amount of hot oil,season lamb with salt and pepper...add 1 cup water:cover and simmer for 11/2 hours..remove shanks: set aside..measure pan juices:skim off fat and add water to make 1cup liquid..return pan juices to skillet with btoth,uncooked rice,and 1/2tsp salt..return lamb to skillet:cover and simmer about 25min.longer or till rice is almost tender...stir n unfrained oranges:simmer 10min...garnish with parsley.
