Cheese Stuffed Zucchini

- 6 zucchini shopping list
- salted water shopping list
- 2 eggs shopping list
- 1-1/4 cups grated medium cheddar cheese shopping list
- 1/2 cup cottage cheese shopping list
- 2 teaspoons dry onion flakes shopping list
- 2 teaspoons parsley flakes shopping list
- 1/2 teaspoon salt shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
How to make it
- Cut ends off zucchini and cook whole in boiling salted water for 12 minutes.
- Remove from water then cut in half lengthwise.
- Scoop out pulp leaving some next to skin then put pulp into bowl.
- Invert zucchini to drain on paper towels.
- Add eggs to pulp then beat well with spoon.
- Add cheddar cheese, cottage cheese, onion, parsley, salt and pepper then mix together.
- Fill each shell and arrange in greased baking dish.
- Bake uncovered at 350 for 20 minutes.
