CHEESE AND CHICKEN PIZZA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Butler Estate in Irving, Texas in 1988.

Ingredients
  • 1 pizza crust (recipe below)
  • 8 ounce can tomato sauce
  • 1 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon white pepper
  • 1-1/2 cups mozzarella cheese shredded
  • 2 cups chicken cooked
  • Pizza crust:
  • 1 package yeast
  • 1/4 cup warm water
  • 6 tablespoons olive oil plus extra for pan
  • 6 cups flour
  • 1 teaspoon salt
  • 2-1/4 cups warm water

Directions
  1. Preheat oven to 425.
  2. Mix pizza shell ingredients together and allow to rise 40 minutes.
  3. Divide dough into 3 parts and refrigerate 2 parts for future use.
  4. Spread remaining part in oiled pizza pan and dimple dough with fingers.
  5. Mix tomato sauce, oregano, basil, salt, garlic powder and pepper then reserve.
  6. Sprinkle 1/2 cup cheese over crust then spread tomato sauce mixture over top.
  7. Top with chicken then sprinkle with remaining cheese then bake uncovered 25 minutes.
