How to make it

  • salt and pepper chicken breasts
  • dredge in flour
  • heat olive oil in saucepan
  • add chicken and saute on each side (this should take very little time if the breasts are thin enough)
  • remove chicken, pour pour any grease
  • add broth, lemon juice and butter and parsley- lower heat and let sauce thicken.
  • Pour sauce over breasts . I serve atop a bed of sauteed spinach. Can be done with veal, as well.
