Easy chicken piccata

- 12 thin sliced chicken breasts shopping list
- salt & pepper shopping list
- flour to dredge ( I use whole wheat) shopping list
- 1/4 cup olive oil shopping list
- 2-3 TBS beef broth, heated shopping list
- juice of one lemon shopping list
- 3 oz. of butter (could use less, but it does round out the sauce) shopping list
- 2 TBS parsley chopped finely shopping list
How to make it
- salt and pepper chicken breasts
- dredge in flour
- heat olive oil in saucepan
- add chicken and saute on each side (this should take very little time if the breasts are thin enough)
- remove chicken, pour pour any grease
- add broth, lemon juice and butter and parsley- lower heat and let sauce thicken.
- Pour sauce over breasts . I serve atop a bed of sauteed spinach. Can be done with veal, as well.
