Orange Chicken And Vegetable Stir Fry Recipe
ORANGE CHICKEN AND VEGETABLE STIR FRY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Walker Estate in McKinney, Texas in 1987.

Ingredients
  • 2 tablespoons cornstarch
  • 1-3/4 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 pound boneless skinless chicken breast cut up
  • 2 cloves garlic minced
  • 1 cup broccoli florets
  • 1 cup red and green bell pepper cut in strips
  • 1 cup sliced onions
  • 1/2 cup orange marmalade
  • 4 cups hot cooked rice

Directions
  1. Combine cornstarch, broth and soy sauce then mix well.
  2. Spray nonstick skillet with cooking spray and heat 1 minute.
  3. Add chicken and cook until browned stirring often.
  4. Add garlic and vegetables and stir fry 5 minutes then add cornstarch mixture and marmalade. Cook until mixture boils and thickens stirring often then serve over hot cooked rice.
