Blueberry Vellia Finnish fruit soup with sweet dumplings

- About ! qt. any fruit, strawberries, raspberries, blackberries or blueberris shopping list
- water to cover shopping list
- 1 c. sugar shopping list
- 11/2 T. cornstarch shopping list
- ~~~~~~~~~~~~~~~~ shopping list
- Finnish Dumplings shopping list
- 1 egg, slightly beaten shopping list
- 1 T. melted shortening or oil shopping list
- 1/2c. milk shopping list
- 3/4 c.flour shopping list
- 1/4 c. sugar ( I added this, real ones don't call for it) shopping list
- 1/2 teas. salt shopping list
- 1/2 c. raisins, softened in hot water, drain (optional) shopping list
How to make it
- Put fruit in heavy sauce pan and add water to cover over 1 inch.
- Add sugar cook to a rolling boil, stirring occasionally.
- Add cornstarch, stir til a little thick (Need to be a little soupy)
- Still boiling drop dumpling into hot soup by teaspoon ( dip teas. into soup after each addition,helps slide off spoon) will rise to top of soup when done
- simmer til dumplings rise to top

- For dumplings
- Beat egg, add shortening or oil, milk
- Stir in flour, sugar and salt, stirring vigorously until smooth
- Stir in raisins if using
- Drop by teas. into boiling soup
