Hot or Cold Vegetable Frittata

- 1/4 cup and 2 teaspoons vegetable oil shopping list
- 2-1/4 cups chopped zucchini shopping list
- 2-1/4 cups chopped fresh mushrooms shopping list
- 1 cup and 2 tablespoons chopped onion shopping list
- 1 cup and 2 tablespoons chopped green bell pepper shopping list
- 1-1/2 cloves garlic, minced shopping list
- 9 eggs, beaten shopping list
- 1/4 cup and 2 tablespoons half-and-half cream shopping list
- 2 (8 ounce) packages cream cheese, diced shopping list
- 3 cups shredded cheddar cheese shopping list
- 6 slices whole wheat bread, cubed shopping list
- 1-1/2 teaspoons salt shopping list
- 1/2 teaspoon ground black pepper shopping list
How to make it
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish. In a large skillet or frying pan, heat oil over medium high heat. Add zucchini, mushrooms, onion, green pepper and garlic; sauté until tender. Remove from heat and let cool slightly. In a large bowl, beat together the eggs and cream. Stir in cream cheese, cheddar cheese, bread cubes and sautéed vegetables. Season with salt and pepper. Mix well and pour into prepared baking dish.
- Bake in preheated oven for one hour, or until center is set. Serve hot or cold.
