Soya bean pea and pistachio couscous with crumbled feta

- 200g dried couscous shopping list
- 1 tsp stock powder shopping list
- 150g frozen soya beans, defrosted or tinned soya beans shopping list
- 150g frozen peas, defrosted shopping list
- 1 bunch of spring onions, finely sliced shopping list
- 1 small bunch of fresh mint, finely chopped shopping list
- 1 small bunch parsley, finely chopped shopping list
- 50g pistachios, chopped shopping list
- 100g pink radishes, finely sliced shopping list
- juice of 2 lemons shopping list
- 2 tbsp olive oil shopping list
- Pinch of sumac (type of spice, optional) shopping list
- 100g feta cheese shopping list
How to make it
- Put the couscous and stock powder into a bowl.
- Pour boiling water into the bowl to about 1cm above the couscous.
- Cover tightly with cling film and leave for 5-10 mins, or until the water is absorbed.
- Stir in the soya beans, peas, spring onions, herbs, pistachios and radishes.
- Finally stir in the lemon juice, olive oil and sumac, and season.
- Spoon into a serving bowl and scatter over the feta.
