Soya Bean Pea And Pistachio Couscous With Crumbled Feta Recipe
This is a colourful and delicate vegetarian dish. Loving the combination of the pink radish and green soya beans and peas. Fantastic for a flavour filled packed lunch! Recipe from Healthy magazine.

Ingredients
  • 200g dried couscous
  • 1 tsp stock powder
  • 150g frozen soya beans, defrosted or tinned soya beans
  • 150g frozen peas, defrosted
  • 1 bunch of spring onions, finely sliced
  • 1 small bunch of fresh mint, finely chopped
  • 1 small bunch parsley, finely chopped
  • 50g pistachios, chopped
  • 100g pink radishes, finely sliced
  • juice of 2 lemons
  • 2 tbsp olive oil
  • Pinch of sumac (type of spice, optional)
  • 100g feta cheese

Directions
  1. Put the couscous and stock powder into a bowl.
  2. Pour boiling water into the bowl to about 1cm above the couscous.
  3. Cover tightly with cling film and leave for 5-10 mins, or until the water is absorbed.
  4. Stir in the soya beans, peas, spring onions, herbs, pistachios and radishes.
  5. Finally stir in the lemon juice, olive oil and sumac, and season.
  6. Spoon into a serving bowl and scatter over the feta.
