How to make it

  • Put the couscous and stock powder into a bowl.
  • Pour boiling water into the bowl to about 1cm above the couscous.
  • Cover tightly with cling film and leave for 5-10 mins, or until the water is absorbed.
  • Stir in the soya beans, peas, spring onions, herbs, pistachios and radishes.
  • Finally stir in the lemon juice, olive oil and sumac, and season.
  • Spoon into a serving bowl and scatter over the feta.
