Chicken Fajita Breakfast Skillet Recipe
CHICKEN FAJITA BREAKFAST SKILLET This recipe came from an estate sale. I obtained it when I purchased the family collection from the Greene Estate in Mesquite, Texas in 1991.

Ingredients
  • 2 boneless skinless chicken breast
  • 2 cups hash browns
  • 1 teaspoon fajita seasoning
  • 1 small red bell pepper
  • 1 small white onion
  • 4 eggs
  • 1/4 cup half and half
  • 1/2 cup shredded cheese
  • 1/2 cup sour cream
  • 1/2 cup guacamole
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup chunky salsa

Directions
  1. Rub chicken breast with fajita seasoning and let marinade 30 minutes.
  2. Slice chicken into strips then use cooking spray and braise chicken in hot skillet until done.
  3. Add onion and bell pepper to skillet then fry and stir on high so as to cook quickly.
  4. Remove all from heat and set aside.
  5. Brown frozen hash browns then cook until desired crispness and season with salt and pepper.
  6. Divide in half and place on serving platters.
  7. Mix egg with half and half, salt and pepper then cook egg mixture into two separate omelets.
  8. Place on top of browned potatoes.
  9. Place one half of cooked fajita meat and cooked onions and peppers on top of omelet.
  10. Sprinkle with 1/4 cup cheese on each platter then serve with sour cream, guacamole and salsa.
