Jumbo Shrimp Skewers With Walnut Pesto Recipe
JUMBO SHRIMP SKEWERS WITH WALNUT PESTO This recipe came from an estate sale. I obtained it when I purchased the family collection from the Greene Estate in Mesquite, Texas in 1991.

Ingredients
  • 16 raw unshelled jumbo shrimp
  • 1/2 cup walnut pieces
  • 4 tablespoons chopped fresh flat leaf parsley
  • 4 tablespoons chopped fresh basil
  • 2 garlic cloves chopped
  • 3 tablespoons grated fresh parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons walnut oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Peel shrimp removing heads but leaving tails then devein and put in large mixing bowl.
  2. Place walnuts, parsley, basil, garlic, cheese and oils in food processor.
  3. Process until finely chopped then season with salt and pepper.
  4. Add half the pesto to shrimp in bowl and toss well then cover and chill overnight.
  5. Thread shrimp onto skewers and cook on hot grill 4 minutes turning once.
  6. Serve with remaining pesto.
