Jumbo Shrimp Skewers With Walnut Pesto

- 16 raw unshelled jumbo shrimp shopping list
- 1/2 cup walnut pieces shopping list
- 4 tablespoons chopped fresh flat leaf parsley shopping list
- 4 tablespoons chopped fresh basil shopping list
- 2 garlic cloves chopped shopping list
- 3 tablespoons grated fresh parmesan cheese shopping list
- 2 tablespoons extra virgin olive oil shopping list
- 2 tablespoons walnut oil shopping list
- 1/4 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
How to make it
- Peel shrimp removing heads but leaving tails then devein and put in large mixing bowl.
- Place walnuts, parsley, basil, garlic, cheese and oils in food processor.
- Process until finely chopped then season with salt and pepper.
- Add half the pesto to shrimp in bowl and toss well then cover and chill overnight.
- Thread shrimp onto skewers and cook on hot grill 4 minutes turning once.
- Serve with remaining pesto.
