Currant Cookies Recipe
These cookies are a little different from your typical cookie. Their texture is more like a biscuit or scone, but they are really good served with butter and strawberry jam.

Ingredients
  • 4 cups flour
  • 1 1/2 cups granulated sugar
  • 1 tbsp. baking powder
  • 3/4 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 1 cup vegetable shortening
  • 1/4 cup milk
  • 3 large eggs, beaten
  • 1 cup dried currants

Directions
  1. In large bowl, combine flour, granulated sugar, baking powder, nutmeg and salt; mix well. Cut in shortening with a pastry blender until crumbly.
  2. Add enough milk to beaten eggs to measure 1 cup. Stir into flour mixture. Stir in currants. Cover; chill for 1 hour.
  3. Preheat griddle to 350°F. Lightly oil griddle.
  4. On lightly floured surface, roll dough out to 1/4 inch thick. Cut with cookie cutter.
  5. Cook on griddle 3 minutes per side or until golden.
