Goes great with veggies and/or potatoes anytime................I just made this for lunch/dinner

Ingredients
  • 1/2 onion chopped
  • 1 cup sliced mushrooms
  • 6 or 8 pieces boneless, skinless chicken breasts(fresh or frozen)
  • olive oil
  • lemon juice
  • 1 egg
  • 11/2 cup Italian seasoned breadcrumbs

Directions
  1. Thaw chicken if frozen
  2. dredge with lemon juice..........drain
  3. dip pieces in egg and then in breadcrumbs
  4. Drizzle olive oil in
  5. 9 X 13 glass baking dish
  6. Place chicken pieces in dish
  7. Put onion and mushroom over the top of chicken
  8. Bake at 375 deg..............1 hour (turn chicken after 1/2 hr.)
  9. Serve with your choice of salad and/or potatoes or veggies
