Georgia Peach Pudding Recipe
GEORGIA PEACH PUDDING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Chiles Estate in Brennan, Texas in 1996.

Ingredients
  • 3 cups cooked rice
  • 3 cups milk
  • 1/3 cup honey
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 tablespoon butter
  • Topping:
  • 1/3 cup firmly packed brown sugar
  • 4 peaches peeled pitted and sliced
  • 2 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon butter
  • 2 tablespoons brandy
  • 6 tablespoons slivered almonds toasted
  • Whipped or sour cream

Directions
  1. Combine rice, milk, honey and salt in saucepan.
  2. Cook over medium heat 30 minutes or until thickened stirring often.
  3. Add vanilla and butter then portion into serving dishes and serve with topping.
  4. To make topping sprinkle brown sugar over peaches and allow to stand 30 minutes.
  5. Combine cornstarch, salt and cinnamon in saucepan.
  6. Blend a little of the juice from the peaches then add peaches and remaining juice.
  7. Bring to a boil then reduce heat and simmer 3 minutes or until clear and thickened.
  8. Remove from heat then add butter and brandy and spoon over rice pudding.
  9. Sprinkle with almonds then serve warm topped with cream.
