Chocolate Brownie Cherry Bars

- 4 ounces unsweetened chocolate shopping list
- 1 cup unsalted butter cut into chunks shopping list
- 1-1/2 cups granulated sugar shopping list
- 3 eggs shopping list
- 1/4 teaspoon salt shopping list
- 1 cup all purpose flour shopping list
- 1 teaspoon vanilla shopping list
- 6 cups cherry vanilla ice cream slightly softened shopping list
How to make it
- Combine chocolate and butter in top pan of a double boiler over simmering water.
- Melt stirring occasionally then remove pan from heat and stir in sugar.
- Beat in eggs 1 at a time then stir in salt and flour then add vanilla and mix well.
- Preheat oven to 350 then spread batter in greased rectangular pan and bake 25 minutes.
- Remove from oven and cool completely.
- Carefully turn pan upside down so brownies are on a clean work surface.
- Trim off browned edges then cut brownies into three slabs.
- Place 1 layer in square pan and spread 3 cups ice cream over top.
- Place another brownie layer on top and press down then spread with remaining ice cream.
- Top with third brownie layer and press down then cover pan with foil and freeze at least 2 hours.
- To serve run a knife around edges of pan and turn ice cream loaf onto chilled cutting board.
- Work fast so ice cream does not melt then slice and serve.
