How to make it

  • Preheat oven to 350 degrees
  • Mix together flour, salt, baking soda, baking powder, cinnamon, ginger, and nutmet
  • In separate bowl, mix together oil and sugars
  • Add pumpkin to oil/sugar mixture and blend well
  • Add in eggs and vanilla to pumpkin, and mix
  • Slowly add in flour mixture to wet mixture
  • Place tablespoonfuls of mixture on baking sheet
  • Bake 10-12 minutes
  • Meanwhile, mix butter until smooth
  • Add cream cheese to butter and mix well
  • Add in powdered sugar, syrup and vanilla and blend until creamy
  • My frosting was thin and glaze-like so i drizzled over top/dipped cookies in it
  • If frosting is thicker, this recipe works well to stick two cookies together to create a whoopie pie
