Blueberry And Persimmon Cupcakes Recipe
Slightly different cupcakes. The persimmons add some more sweetness.

Ingredients
  • 3/4 cup milk
  • 1/2 cup melted butter
  • 2 medium eggs
  • 1 cup sugar
  • 2 cups flour
  • 1 small spoon of cinnamon
  • 1 large spoon of baking powder
  • 1 persimmon (also known as kaki or sharon fruit)
  • 1 punnet of blueberries
  • a pinch of salt

Directions
  1. Add milk, melted butter, sugar and eggs to a mixing bowl.
  2. Whisk thoroughly.
  3. Add flour, cinnamon and baking powder and stir gently with a wooden spoon.
  4. Cut persimmon into small chunks and add to the mix.
  5. Add blueberries and stir mix again.
  6. Add salt.
  7. Place mixture in cupcake trays and bake it for about 15-20 minutes at about 150 degrees celsius.
