MAHI MAHI SATAY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Crenshaw Estate in Grand Prairie, Texas in 1994.

Ingredients
  • 1 teaspoon canola oil
  • 1 tablespoon rice vinegar
  • 1 garlic clove bruised
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 pound mahi mahi
  • 2 wooden or metal skewers
  • Peanut sauce:
  • 2 tablespoons crunchy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons granulated sugar
  • 6 drops hot pepper sauce
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Directions
  1. Preheat grill or broiler then mix oil, rice vinegar and garlic then season with salt and pepper.
  2. Slice mahi mahi into strips 1/2" thick and 4” long.
  3. Marinate 10 minutes turning after 5 minutes to coat all sides then thread fish strips onto skewers.
  4. Place on grill grates directly over heat then grill 2 minutes per side.
  5. To make sauce mix peanut butter, soy sauce and vinegar in saucepan until smooth consistency.
  6. Add sugar and pepper sauce.
  7. Separately mix cornstarch and water then blend into peanut mixture.
  8. Cook over medium heat until thick about 2 minutes.
  9. Serve skewers with some sauce on a plate and serve remaining sauce on the side for dipping.
