How to make it

  • Preheat grill or broiler then mix oil, rice vinegar and garlic then season with salt and pepper.
  • Slice mahi mahi into strips 1/2" thick and 4” long.
  • Marinate 10 minutes turning after 5 minutes to coat all sides then thread fish strips onto skewers.
  • Place on grill grates directly over heat then grill 2 minutes per side.
  • To make sauce mix peanut butter, soy sauce and vinegar in saucepan until smooth consistency.
  • Add sugar and pepper sauce.
  • Separately mix cornstarch and water then blend into peanut mixture.
  • Cook over medium heat until thick about 2 minutes.
  • Serve skewers with some sauce on a plate and serve remaining sauce on the side for dipping.
