- 1 teaspoon canola oil shopping list
- 1 tablespoon rice vinegar shopping list
- 1 garlic clove bruised shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 3/4 pound mahi mahi shopping list
- 2 wooden or metal skewers shopping list
- Peanut sauce: shopping list
- 2 tablespoons crunchy peanut butter shopping list
- 2 tablespoons soy sauce shopping list
- 1 tablespoon rice vinegar shopping list
- 2 tablespoons granulated sugar shopping list
- 6 drops hot pepper sauce shopping list
- 1 teaspoon cornstarch shopping list
- 1 tablespoon water shopping list
How to make it
- Preheat grill or broiler then mix oil, rice vinegar and garlic then season with salt and pepper.
- Slice mahi mahi into strips 1/2" thick and 4” long.
- Marinate 10 minutes turning after 5 minutes to coat all sides then thread fish strips onto skewers.
- Place on grill grates directly over heat then grill 2 minutes per side.
- To make sauce mix peanut butter, soy sauce and vinegar in saucepan until smooth consistency.
- Add sugar and pepper sauce.
- Separately mix cornstarch and water then blend into peanut mixture.
- Cook over medium heat until thick about 2 minutes.
- Serve skewers with some sauce on a plate and serve remaining sauce on the side for dipping.
