Slow Cook Chicken Fricasee Recipe
This is a traditional Spanish Food that will become a regular at your table. Served best with white rice and fried plantains.

Ingredients
  • 8 pieces of chicken thighs or chicken breasts or a mix or both
  • 1 yellow onion diced
  • 3 peeled red potatoes cut in quarters
  • 3 carrots cut into 5 pieces each
  • 2 crushed garlic cloves
  • 1/4 tspn yellow powder food coloring or saphron (optional)
  • 1 cup chicken stock
  • 1 can 8 oz tomato sauce
  • 1/2 tablspn salt
  • 1/2 tblspn black pepper
  • 1/2 tablspn cumin
  • 1/4 tspn paprika
  • 1/2 tblspn dry oregano
  • 1 tblspn of dry parsely (can be altered with 1/4 cup of fresh italian parsley)
  • 1 box 1 1/2 oz raisins (optional, but great if you have)
  • 10 spanish olives (seedless olives)
  • 1/4 cup dry white wine

Directions
  1. To Slow Cooker:
  2. Add diced onions
  3. Quartered potatoes
  4. Carrots
  5. Add crushed garlic cloves
  6. Add food coloring on top of above ingredients
  7. Add chicken stock
  8. Wash chicken and place on top of above ingredients
  9. Mix tomato sauce, salt, pepper, cumin, paprika, oregano and parsley
  10. Pour sauce on top of chicken
  11. Add raisins and olives
  12. Pour dry white wine
  13. Cover and cook for 4 hours on medium or 5 hours on low
