Fruit Paella-Best Fruit Cocktail Cake Recipe
This is a wonderful rich cake and you would not guess you were eating fruit cocktail. This is Not a fruitcake. Everyone loves it, if you like rich desserts! Careful not to eat too much in one day!

Ingredients
  • For cake:
  • 16 oz can fruit cocktail
  • Put 2 tsp baking soda into fruit in can to dissolve
  • 1 1/2 c sugar
  • 2 c flour
  • 4 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1/8 tsp cinnamon
  • --------------------------------------
  • For Sauce:
  • 1 large can evaporated milk (12-13 oz) (NOT SWEETENED CONDENSED)
  • 1 stick margarine (1/4 pound)
  • 3/4 cup sugar (white)

Directions
  1. Mix first eight ingredients together in large bowl. Transfer to 9” x 13” greased and floured baking dish, and bake at 350 degrees, preheated. Bake 30 to 35 minutes. Test after 25 to 30 minutes.
  2. While baking paella cake, prepare sauce (icing):
  3. 1 large can evaporated milk
  4. 1 stick margarine
  5. 3/4 cup sugar
  6. Simmer over medium, then low heat, until fudgy or getting thick, about 35 minutes. This does not need much stirring.
  7. Remove cake from oven after 25 to 35 minutes of baking. Cake will be moist, yet not runny.
  8. While cake is still hot, spread sauce over cake. If desired, serve with whipped cream.

I have tried this and its wonderful!


This is what I brought to training day on Friday, but I did not have evaporated milk, so my cake had no topping, except a sprinkle of powdered sugar on top. With the proper topping, it is rich and wonderful !
