How to make it

  • Mix first eight ingredients together in large bowl. Transfer to 9” x 13” greased and floured baking dish, and bake at 350 degrees, preheated. Bake 30 to 35 minutes. Test after 25 to 30 minutes.
  • While baking paella cake, prepare sauce (icing):
  • 1 large can evaporated milk
  • 1 stick margarine
  • 3/4 cup sugar
  • Simmer over medium, then low heat, until fudgy or getting thick, about 35 minutes. This does not need much stirring.
  • Remove cake from oven after 25 to 35 minutes of baking. Cake will be moist, yet not runny.
  • While cake is still hot, spread sauce over cake. If desired, serve with whipped cream.

    This is what I brought to training day on Friday, but I did not have evaporated milk, so my cake had no topping, except a sprinkle of powdered sugar on top. With the proper topping, it is rich and wonderful !
