How to make it

  • Core tomatoes and chop then set aside.
  • Heat oil in a large skillet over medium high heat.
  • Add shrimp, onion, garlic and oregano then cook stirring occasionally for 3 minutes.
  • Add reserved tomatoes, wine, salt and pepper then cook 2 minutes longer.
  • Remove from heat and stir in basil and pine nuts then serve over hot pasta.
