Almost Instant Fresh Tomato Sauce With Shrimp And Pine Nuts

- 2 pounds ripe tomatoes shopping list
- 2 tablespoons olive oil shopping list
- 1 pound medium shrimp shelled and deveined shopping list
- 1/2 cup diced white onion shopping list
- 1/2 teaspoon minced garlic shopping list
- 1/2 teaspoon oregano crushed shopping list
- 1/4 cup dry white wine shopping list
- 3/4 teaspoon salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- 1 cup thinly sliced fresh basil shopping list
- 1/4 cup toasted pine nuts shopping list
How to make it
- Core tomatoes and chop then set aside.
- Heat oil in a large skillet over medium high heat.
- Add shrimp, onion, garlic and oregano then cook stirring occasionally for 3 minutes.
- Add reserved tomatoes, wine, salt and pepper then cook 2 minutes longer.
- Remove from heat and stir in basil and pine nuts then serve over hot pasta.
