Almost Instant Fresh Tomato Sauce With Shrimp And Pine Nuts Recipe
ALMOST INSTANT FRESH TOMATO SAUCE WITH SHRIMP AND PINE NUTS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gleason Estate in Centerville, Texas in 1989.

Ingredients
  • 2 pounds ripe tomatoes
  • 2 tablespoons olive oil
  • 1 pound medium shrimp shelled and deveined
  • 1/2 cup diced white onion
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon oregano crushed
  • 1/4 cup dry white wine
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup thinly sliced fresh basil
  • 1/4 cup toasted pine nuts

Directions
  1. Core tomatoes and chop then set aside.
  2. Heat oil in a large skillet over medium high heat.
  3. Add shrimp, onion, garlic and oregano then cook stirring occasionally for 3 minutes.
  4. Add reserved tomatoes, wine, salt and pepper then cook 2 minutes longer.
  5. Remove from heat and stir in basil and pine nuts then serve over hot pasta.
