Apple And Calvados Glace Recipe
This is more of a pallet cleanser than a dessert. Serve between courses during multi-coursed meals.

Ingredients
  • 1 cup apple cider
  • 3 cups unsweetened apple juice
  • 1/2 cup Calvados + more for serving
  • Pinch of salt
  • Apple peel and slices for garnish

Directions
  1. Combine all but the garnish items, stir and pour into shallow dish.
  2. Freeze.
  3. Check after 30 minutes and break up the slush with a fork. If you over freeze, don't worry. Just chip away with a fork to break it up into flakes.
  4. Scoop 1/4 cup (a little goes a long way) into a martini glass, drizzle with a little more Calvados, garnish with apple slice off the rim and curl of peel on top.
  5. This is a great pallet cleanser but can also serve as a dessert.
