How to make it

  • Place onions, squash, bell peppers and garlic in a bowl and toss well.
  • Combine remaining ingredients in a lidded jar and shake well.
  • Pour over vegetables and toss then spoon into greased baking dish.
  • Bake at 425 for 20 minutes stirring every 5 minutes.
  • Serve warm or at room temperature.

    Great recipe! I do this all the time. You can mix and match your vegs. I like to add muchrooms and tomatoes, corn on the cob ... You can add small potatoes if you simmer them first until fork tender, then thickly slice them. You can also do this on the grill. It's pretty much a complete meal, unless you want to add fish or poultry. It's quick, easy and healthful. Just make sure you use extra virgin olive oil.
