Peacock Vegetables

- 2 purple onions cut into eighths shopping list
- 2 small yellow squash cut in 1/2" strips shopping list
- 2 small zucchini cut in 1/2" strips shopping list
- 1 each red, yellow and green bell pepper cut in 1/2" strips shopping list
- 4 cloves garlic sliced thin shopping list
- 2 tablespoons minced fresh parsley shopping list
- 1 tablespoon balsamic vinegar shopping list
- 1 tablespoon olive oil shopping list
- 1/2 teaspoon dried oregano or 3 tablespoons fresh shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
How to make it
- Place onions, squash, bell peppers and garlic in a bowl and toss well.
- Combine remaining ingredients in a lidded jar and shake well.
- Pour over vegetables and toss then spoon into greased baking dish.
- Bake at 425 for 20 minutes stirring every 5 minutes.
- Serve warm or at room temperature.
