Quick shrimp ceviche

- 1/2 lb med shrimp, shelled deveined and cooked shopping list
- 1 large cucumber, peeled, seeded, and coarsely chopped shopping list
- 1/2 med red onion, thinly sliced shopping list
- 1 clove minced garlic shopping list
- 3 roma tomatoes coarsely diced shopping list
- 1 fresh jalapeno, seeded and veins removed, minced shopping list
- 1/4 c fresh cilantro leaves shopping list
- juice from 1 orange shopping list
- juice fom 1 lime shopping list
- juice from 1 lemon shopping list
- 1/4 teas ground cumin shopping list
- 1/4 teas oregano shopping list
- salt and pepper to taste shopping list
How to make it
- Place the sliced onion in a bowl of salted water for 10 minutes and then drain (this is remove the "bite")
- In a small bowl combine the lime, lemon, and orange juices with the oregano, cumin, and garlic.
- In a glass bowl toss the rest of the ingredients and toss well
- Pour the citrus mixture over the top
- Refrigerate for at least an hour, stirring occasionally.
- Adjust the salt and pepper
- Serve on a lettuce leaf or in a long stem martini glass but on a plate or in a bowl and it will taste just as good
