Chilled Beet Soup

This is the perfect recipe for a summer afternoon! Add a icy glass of tea!
Ingredients
- 1 c. of cooked beets shopping list
- 1 c. of crushed ice shopping list
- 1 1/2 c. of sour cream shopping list
- 2 tbsp. of lemon juice shopping list
- 1/2 c. of small onion shopping list
How to make it
- First place the sour cream, lemon juice, onion and the beets into a
- food processor.
- Puree for a couple of minutes.
- Finally, add the ice and chill.
- Just before serving, add a dollop of sour cream.
