Mandarin Marble Loaf

- 4 tablespoons unsweetened cocoa powder shopping list
- 3 tablespoons warm vegetable oil shopping list
- Cake: shopping list
- 1 cup vegetable oil shopping list
- 2-1/4 cups granulated sugar shopping list
- 5 eggs shopping list
- 4 teaspoons vanilla extract shopping list
- 1/4 cup water shopping list
- 1 cup undiluted frozen orange juice defrosted shopping list
- Zest of 1 orange finely minced shopping list
- 3-1/4 cups all purpose flour shopping list
- 1/2 teaspoon baking soda shopping list
- 3-1/2 teaspoons baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1/2 cup finely grated semisweet chocolate shopping list
- Topping: shopping list
- 1 cup confectioners' sugar shopping list
- 6 tablespoons orange juice shopping list
- Long shreds of orange zest shopping list
How to make it
- Preheat oven to 350 then generally grease 2 loaf pans and line bottom with parchment paper.
- Prepare chocolate paste by placing cocoa and oil in a small bowl and blending well.
- Add a drop or more of oil if mixture appears too stiff or thick to stir or blend easily.
- For cake blend oil with sugar until light and fluffy scraping bowl often.
- Blend in the eggs and stir in the vanilla, water, orange juice and zest.
- In a separate bowl whisk together flour, soda, baking powder and salt.
- Add to wet ingredients then remove one third of the batter to a small bowl.
- Stir chocolate paste into this to make a chocolate batter and add grated chocolate.
- Spoon alternating portions of batters into prepared pan then bake 40 minutes.
- Cool in the pan 20 minutes before inverting onto a wire rack.
- Stir together confectioners' sugar and orange juice to make a thick but pourable sauce.
- Drizzle this over top of loaves then garnish with zest.
