Spinach Mushroom and Mozzarella Wraps

- 1 tablespoon olive oil shopping list
- 8 ounces fresh white mushrooms sliced shopping list
- 1 teaspoon minced garlic shopping list
- 2 flour tortillas shopping list
- 1/2 pound fresh spinach trimmed and stemmed shopping list
- 1 plum tomato diced shopping list
- 1/2 cup shredded mozzarella cheese shopping list
How to make it
- Preheat oven to 350 degrees.
- Heat oil in a large skillet over medium high heat.
- Add mushrooms and garlic then cook and stir until mushroom liquid has evaporated.
- On each tortilla arrange layers of spinach, tomato, mozzarella and cooked mushrooms.
- Roll up and place seam side down in lightly oiled baking dish.
- Bake uncovered until hot and cheese is melted about 10 minutes.
- Cut each tortilla crosswise into quarters then serve hot or at room temperature.
