Spinach Mushroom And Mozzarella Wraps Recipe
SPINACH MUSHROOM AND MOZZARELLA WRAPS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Crenshaw Estate in Grand Prairie, Texas in 1994.

Ingredients
  • 1 tablespoon olive oil
  • 8 ounces fresh white mushrooms sliced
  • 1 teaspoon minced garlic
  • 2 flour tortillas
  • 1/2 pound fresh spinach trimmed and stemmed
  • 1 plum tomato diced
  • 1/2 cup shredded mozzarella cheese

Directions
  1. Preheat oven to 350 degrees.
  2. Heat oil in a large skillet over medium high heat.
  3. Add mushrooms and garlic then cook and stir until mushroom liquid has evaporated.
  4. On each tortilla arrange layers of spinach, tomato, mozzarella and cooked mushrooms.
  5. Roll up and place seam side down in lightly oiled baking dish.
  6. Bake uncovered until hot and cheese is melted about 10 minutes.
  7. Cut each tortilla crosswise into quarters then serve hot or at room temperature.
