How to make it

  • Preheat oven to 375.
  • In skillet heat a little olive oil over medium heat and gently cook onion with a pinch of salt.
  • Cook 3 minutes without allow to color then add tomato and cook gently for 7 minutes.
  • Season to taste then transfer to a bowl and set aside.
  • Sauté mushrooms in a little olive oil over high heat for 4 minutes.
  • Drain off any excess moisture then season to taste and remove and set aside.
  • Sauté potatoes in batches in some olive oil over medium low heat for 3 minutes.
  • Return all the potatoes to the pan then add the garlic and cook another minute.
  • Season with salt and freshly ground black pepper and drain on paper towels.
  • Arrange a layer of potatoes in the bottom of an oval baking dish.
  • Cover with a layer of mushrooms followed by a layer of spinach then a layer of tomatoes.
  • Bake 45 minutes covered with waxed paper then sprinkle with rosemary and parsley and serve.
