Vegetable Titan Recipe
VEGETABLE TITAN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Fischer Estate in Crandall, Texas in 1987.

Ingredients
  • 1 small white onion thinly sliced
  • 1-1/2 pounds tomatoes peeled seeded and diced
  • 2 portabella mushrooms thinly sliced
  • 4 potatoes thinly sliced
  • 2 cloves garlic finely chopped
  • 1 pound spinach leaves with stems removed
  • 1 sprig fresh rosemary
  • 1/4 cup chopped fresh parsley

Directions
  1. Preheat oven to 375.
  2. In skillet heat a little olive oil over medium heat and gently cook onion with a pinch of salt.
  3. Cook 3 minutes without allow to color then add tomato and cook gently for 7 minutes.
  4. Season to taste then transfer to a bowl and set aside.
  5. Sauté mushrooms in a little olive oil over high heat for 4 minutes.
  6. Drain off any excess moisture then season to taste and remove and set aside.
  7. Sauté potatoes in batches in some olive oil over medium low heat for 3 minutes.
  8. Return all the potatoes to the pan then add the garlic and cook another minute.
  9. Season with salt and freshly ground black pepper and drain on paper towels.
  10. Arrange a layer of potatoes in the bottom of an oval baking dish.
  11. Cover with a layer of mushrooms followed by a layer of spinach then a layer of tomatoes.
  12. Bake 45 minutes covered with waxed paper then sprinkle with rosemary and parsley and serve.
