Vegetable Titan

- 1 small white onion thinly sliced shopping list
- 1-1/2 pounds tomatoes peeled seeded and diced shopping list
- 2 portabella mushrooms thinly sliced shopping list
- 4 potatoes thinly sliced shopping list
- 2 cloves garlic finely chopped shopping list
- 1 pound spinach leaves with stems removed shopping list
- 1 sprig fresh rosemary shopping list
- 1/4 cup chopped fresh parsley shopping list
How to make it
- Preheat oven to 375.
- In skillet heat a little olive oil over medium heat and gently cook onion with a pinch of salt.
- Cook 3 minutes without allow to color then add tomato and cook gently for 7 minutes.
- Season to taste then transfer to a bowl and set aside.
- Sauté mushrooms in a little olive oil over high heat for 4 minutes.
- Drain off any excess moisture then season to taste and remove and set aside.
- Sauté potatoes in batches in some olive oil over medium low heat for 3 minutes.
- Return all the potatoes to the pan then add the garlic and cook another minute.
- Season with salt and freshly ground black pepper and drain on paper towels.
- Arrange a layer of potatoes in the bottom of an oval baking dish.
- Cover with a layer of mushrooms followed by a layer of spinach then a layer of tomatoes.
- Bake 45 minutes covered with waxed paper then sprinkle with rosemary and parsley and serve.
