Vegetarian Lasagna

- 11 lasagna noodles, cooked and drained shopping list
- 1 c. dried bread crumbs shopping list
- 1 c. cracker crumbs shopping list
- salt and pepper shopping list
- 2 med. eggplants, cut in 1/2" slices shopping list
- 2 eggs shopping list
- salad oil shopping list
- 16 oz. mozzarella cheese shopping list
- 1 lg. ctn. ricotta cheese shopping list
- 1 (29 oz) jar meatless spaghetti sauce shopping list
- 1/4 c grated parm cheese shopping list
How to make it
- Preheat oven to 350
- mix bread crumbs; season with salt and pepper, place in shallow bowl or wax paper, whatever is easier for you to stay clean
- in small bowl, mix eggs with 2 teaspoons water
- dip eggplant into egg mixture, then crumb mixture
- fry in salad oil until brown; drain on paper towels
- in a 9x13 inch pan, place layer of noodles, layer of eggplant, spread with 1/2 ricotta cheese, sprikle 1/3 of mozzarella cheese, 1/3 of spaghetti sauce. Repeat this layer.
- End with noodles, sauce and parm cheese
- Bake for 30 minutes at 350, or until heated all the way through.
