Ingredients
  • 11 lasagna noodles, cooked and drained
  • 1 c. dried bread crumbs
  • 1 c. cracker crumbs
  • salt and pepper
  • 2 med. eggplants, cut in 1/2" slices
  • 2 eggs
  • salad oil
  • 16 oz. mozzarella cheese
  • 1 lg. ctn. ricotta cheese
  • 1 (29 oz) jar meatless spaghetti sauce
  • 1/4 c grated parm cheese

Directions
  1. Preheat oven to 350
  2. mix bread crumbs; season with salt and pepper, place in shallow bowl or wax paper, whatever is easier for you to stay clean
  3. in small bowl, mix eggs with 2 teaspoons water
  4. dip eggplant into egg mixture, then crumb mixture
  5. fry in salad oil until brown; drain on paper towels
  6. in a 9x13 inch pan, place layer of noodles, layer of eggplant, spread with 1/2 ricotta cheese, sprikle 1/3 of mozzarella cheese, 1/3 of spaghetti sauce. Repeat this layer.
  7. End with noodles, sauce and parm cheese
  8. Bake for 30 minutes at 350, or until heated all the way through.
