How to make it

  • Preheat oven to 350
  • mix bread crumbs; season with salt and pepper, place in shallow bowl or wax paper, whatever is easier for you to stay clean
  • in small bowl, mix eggs with 2 teaspoons water
  • dip eggplant into egg mixture, then crumb mixture
  • fry in salad oil until brown; drain on paper towels
  • in a 9x13 inch pan, place layer of noodles, layer of eggplant, spread with 1/2 ricotta cheese, sprikle 1/3 of mozzarella cheese, 1/3 of spaghetti sauce. Repeat this layer.
  • End with noodles, sauce and parm cheese
  • Bake for 30 minutes at 350, or until heated all the way through.
