How to make it

  • Preheat oven to 350.
  • Wash potatoes and cut into 1” cubes.
  • Wash and trim beans and cut into 2” pieces.
  • Place potatoes in steamer over 3” water then cover pot and bring water to a boil.
  • Steam 5 minutes then add beans and continue steaming another 5 minutes.
  • While vegetables steam, mix mustard and vinegar in a large bowl until smooth.
  • Add horseradish and broth then stir with fork to a smooth consistency.
  • Add salt and pepper then add potatoes and beans when they are cooked and toss well.
  • Wash tuna and pat dry with paper towels then coat both sides with sesame seeds.
  • Preheat a medium nonstick skillet on medium high for 2 minutes.
  • Add olive oil and sear tuna for 2 minutes per side then salt and pepper the cooked side.
  • Cover and remove from heat then allow to stand 5 minutes.
  • Divide greens in half and place on plates then spoon potatoes and beans onto lettuce.
  • Add tomatoes then slice tuna into strips and arrange on top.
  • Pour remaining dressing over top then serve with baguette.
