QUATTRO FORMAGGI This recipe came from an estate sale. I obtained it when I purchased the family collection from the Montgomery Estate in Crawford, Texas in 1981.

Ingredients
  • 1 package dry yeast
  • 1 cup hot water not boiling
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 2 tablespoons oil
  • 2-1/2 cups flour
  • 1 teaspoon garlic oil
  • 1/2 small red onion very thinly sliced
  • 2 ounces blue cheese
  • 2 ounces mozzarella cheese
  • 2 ounces gruyere cheese grated
  • 2 tablespoons freshly grated parmesan cheese
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon freshly ground black pepper

Directions
  1. Preheat oven to 425.
  2. Dissolve yeast in hot water then add sugar, salt and oil.
  3. Dump in flour all at once and mix with a fork until dough forms a ball.
  4. Divide dough into four pieces and roll out each one on a lightly floured surface into 5” circle.
  5. Place well apart on two greased baking sheets then pinch up dough edges to make a thin rim.
  6. Brush with garlic oil and top with the red onion.
  7. Cut blue cheese and mozzarella into cutes and scatter over the bases.
  8. Mix together the gruyere, parmesan and thyme then sprinkle over top.
  9. Sprinkle with plenty of black pepper then bake 20 minutes and serve immediately.
