Dilly Sole Fillets

- 1-1/2 pounds sole fillets shopping list
- 3 cups white bread crumbs shopping list
- 1 tablespoon chopped fresh tarragon shopping list
- 2 eggs lightly beaten shopping list
- Sauce: shopping list
- 2/3 cup mayonnaise shopping list
- 1 tablespoon capers drained shopping list
- 1 tablespoon gherkins drained shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
How to make it
- Cut fillets into strips then preheat oven to 425.
- Stir bread crumbs and tarragon together until thoroughly mixed.
- Dip fish into egg and then bread crumb mixture and continue until all crumbs have been used up.
- Place on a greased baking sheet and cook in preheated oven for 10 minutes.
- Roughly chop capers and gherkins then stir into mayonnaise.
- Season with salt and pepper then dollop over fillets.
