DILLY SOLE FILLETS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Montgomery Estate in Crawford, Texas in 1981.

Ingredients
  • 1-1/2 pounds sole fillets
  • 3 cups white bread crumbs
  • 1 tablespoon chopped fresh tarragon
  • 2 eggs lightly beaten
  • Sauce:
  • 2/3 cup mayonnaise
  • 1 tablespoon capers drained
  • 1 tablespoon gherkins drained
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Cut fillets into strips then preheat oven to 425.
  2. Stir bread crumbs and tarragon together until thoroughly mixed.
  3. Dip fish into egg and then bread crumb mixture and continue until all crumbs have been used up.
  4. Place on a greased baking sheet and cook in preheated oven for 10 minutes.
  5. Roughly chop capers and gherkins then stir into mayonnaise.
  6. Season with salt and pepper then dollop over fillets.
