How to make it

  • Cut fillets into strips then preheat oven to 425.
  • Stir bread crumbs and tarragon together until thoroughly mixed.
  • Dip fish into egg and then bread crumb mixture and continue until all crumbs have been used up.
  • Place on a greased baking sheet and cook in preheated oven for 10 minutes.
  • Roughly chop capers and gherkins then stir into mayonnaise.
  • Season with salt and pepper then dollop over fillets.
