Grilled Island Style Chicken

- 4 lbs chicken (I prefer boneless skinless thighs) shopping list
- 20 oz soy sauce shopping list
- 24 oz canned pineapple juice DOLE shopping list
- 2 to 6 Tbsp Vietnamese chili garlic sauce (with seeds) shopping list
- 4 tbsp minced garlic shopping list
- 2 tsp powdered ginger shopping list
- salt and pepper to taste shopping list
How to make it
- Ok, we need two large bowls. One for our marinade and one for our chicken
- Coat chicken to your liking with salt and pepper on both sides and place one layer of chicken in the bottom of one bowl
- In other bowl, combine soy sauce, pineapple juice, minced garlic, ginger and chili sauce*
- *Please follow these guidelines for spice 2-3TBSP SPICY 4-5TBSP BITER...BEWARE 6+TBSP YOU'RE A WILD MAN (or woman).
- Mix marinade well and pour over first layer of chicken.
- Repeat process of layering seasoned chicken and marinade
- Reserve remaining marinade for basting
- Prepare for direct grilling
- Preheat grill to 425. This is a 2-3 Mississippi count with your barehand over the grill until it hurts.
- Arrange chicken on a 45 degree angle to the grill racks. Grill at 425 for five minutes.
- After five minutes, baste chicken generously and turn chicken pieces 45 degrees to the left (TO CREATE YOUR CRISSCROSS GRILL MARKS)
- After five minutes, baste generously and flip.
- Repeat grilling process for other side.
- Serve hot with sticky white rice. Enjoy!
