Mos Chicken Salad Recipe
So this is a recipe inspired by my neighbour and there's a few things that i have added to it for a better hopefully lower fat/cholesterol indulgence

Ingredients
  • 2 BBQ Chicken Breasts( leftover from a rotisserie or El Pollo Loco)
  • 1 stem of celery( chopped into little itty bitty cubes, leave as well thankyou)
  • 1/2 cup of chopped red roasted bell peppers
  • 5 purple grapes or green (whichever you have) or sub for raisins
  • 1/4 cup of Olive Oil Mayo( KRAFT brand)
  • salt
  • Cracked black pepper
  • 1 tsp of Herbs de provance

Directions
  1. dice the chicken(skin and all) into small 1cm by1cm cubes
  2. add diced celery and roasted bell peppers
  3. slice grapes thin and add
  4. add the Mayo, and herbs, salt to taste and about1/2 TBSP pf cracked black pepper
  5. mix everything together well and serve
  6. if its too dry add more mayo as needed and for an extra kick, you can add 1 TSP of BBQ sauce( i prefer Bulleye) and 1/2 TSP red pepper flakes
  7. chill well and serve with crackers or toasted sourdough bread
