Broiled Wild Mushrooms With Proscuitto

- 1-1/2 pounds assorted wild mushrooms shopping list
- 1 tablespoon butter shopping list
- 3 tablespoons olive oil shopping list
- 2 garlic cloves minced shopping list
- 2 tablespoons minced Italian parsley shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground pepper shopping list
- 2 ounces prosciutto slivered shopping list
How to make it
- Cut large mushrooms into quarters medium ones in half and leave the small ones whole.
- Combine butter and 2 tablespoons of the olive oil in a skillet over medium high heat.
- When butter has melted add garlic and sauté a minute or two.
- Add the mushrooms then sprinkle them with half of the parsley, salt and pepper.
- Stir and cook two minutes then transfer mushrooms to shallow baking dish.
- Toss with prosciutto then put them under broiler 5 minutes.
- Before serving sprinkle with remaining olive oil and parsley.
