Broiled Wild Mushrooms With Proscuitto Recipe
BROILED WILD MUSHROOMS WITH PROSCIUTTO This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hayden Estate in Caddo Mills, Texas in 1984.

Ingredients
  • 1-1/2 pounds assorted wild mushrooms
  • 1 tablespoon butter
  • 3 tablespoons olive oil
  • 2 garlic cloves minced
  • 2 tablespoons minced Italian parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 2 ounces prosciutto slivered

Directions
  1. Cut large mushrooms into quarters medium ones in half and leave the small ones whole.
  2. Combine butter and 2 tablespoons of the olive oil in a skillet over medium high heat.
  3. When butter has melted add garlic and sauté a minute or two.
  4. Add the mushrooms then sprinkle them with half of the parsley, salt and pepper.
  5. Stir and cook two minutes then transfer mushrooms to shallow baking dish.
  6. Toss with prosciutto then put them under broiler 5 minutes.
  7. Before serving sprinkle with remaining olive oil and parsley.
