How to make it

  • Cut large mushrooms into quarters medium ones in half and leave the small ones whole.
  • Combine butter and 2 tablespoons of the olive oil in a skillet over medium high heat.
  • When butter has melted add garlic and sauté a minute or two.
  • Add the mushrooms then sprinkle them with half of the parsley, salt and pepper.
  • Stir and cook two minutes then transfer mushrooms to shallow baking dish.
  • Toss with prosciutto then put them under broiler 5 minutes.
  • Before serving sprinkle with remaining olive oil and parsley.
