SPICE ISLAND CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Fargo Estate in Denton, Texas in 1986.

Ingredients
  • 8 skinless chicken pieces
  • 1 tablespoon fresh ginger minced
  • 2 cloves garlic minced
  • 3 green onions chopped fine
  • 1 teaspoon chicken broth
  • 1/2 teaspoon cumin
  • 1/2 teaspoon curry
  • 1/2 teaspoon flour
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons light brown sugar
  • 1 tablespoon soy sauce
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons fresh lime juice

Directions
  1. Arrange chicken pieces in a shallow microwave dish large enough to hold chicken in one layer.
  2. Combine ginger, garlic, green onions and broth in a microwave proof bowl or cup.
  3. Microwave on high for one minute then stir in all remaining seasoning ingredients.
  4. Mix well to thoroughly combine then pour evenly over chicken and let stand 30 minutes.
  5. Turn chicken once then cover chicken pan with waxed paper and microwave on high 12 minutes.
  6. Allow to stand 10 minutes and serve.
