CREAMY CHICKEN CHOWDER This recipe came from an estate sale. I obtained it when I purchased the family collection from the Metzger Estate in Grand Prairie, Texas in 1994.

Ingredients
  • 4 cups chicken broth
  • 1-1/2 cups diced potatoes
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1/2 cup diced white onions
  • 1/4 cup butter
  • 1/3 cup all purpose flour
  • 3 cups milk
  • 1 tablespoon soy sauce
  • 8 ounces processed cheese spread cubed
  • 2 cups chopped cooked chicken

Directions
  1. Combine broth and vegetables in a large sauce pan.
  2. Cover and cook over medium heat for 15 minutes.
  3. Melt butter in a Dutch oven over low heat then add flour and stir until smooth.
  4. Cook 1 minute stirring constantly.
  5. Gradually stir in milk and cook over medium heat stirring constantly until thick and bubbly.
  6. Gradually stir in vegetable mixture, soy sauce, cheese and chicken.
  7. Cook until cheese melts and soup is thoroughly heated.
