SAUCY CHEESY CHICKEN This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Jennet Estate in Allen, Texas in 1983.

Ingredients
  • 8 chicken breast halves
  • 1 egg slightly beaten
  • 1/2 cup breadcrumbs
  • 2 tablespoons butter
  • 1-3/4 cup spaghetti sauce
  • 1/2 cup mozzarella cheese shredded
  • 1 tablespoon grated parmesan cheese
  • 1/4 cup parsley

Directions
  1. Remove skin from chicken breasts.
  2. Using palm of hand flatten chicken to even thickness.
  3. Dip chicken into egg then into crumbs to coat.
  4. In skillet over medium heat in hot butter brown chicken on both sides.
  5. Add spaghetti sauce then reduce heat and cover then simmer 10 minutes.
  6. Sprinkle with cheeses and parsley then cover and simmer 5 minutes.
