CITRUS POPPY SEED SALAD This recipe came from an Estate sale. I obtained it when I purchased the family collection from the Evans Estate in Arlington, Texas in 1989.

Ingredients
  • 1 pound deli smoked turkey thickly sliced and cut into 1/2" cubes
  • 1 ripe mango peeled pitted and cut into 1/2" cubes
  • 1 large navel orange peeled pith removed and sectioned
  • 1 blood orange peeled pith removed and sectioned
  • 1 kiwi peeled and sliced into bite size pieces
  • 1 ripe avocado peeled pitted and cut into 1/2" cubes
  • 1 tablespoon fresh lime juice
  • Spinach
  • 1 star fruit cut horizontally into 1/4" slices for garnish
  • 1/2 cup toasted slivered almonds or macadamia nuts for garnish
  • Dressing:
  • 1/3 cup granulated sugar
  • 1 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 2 tablespoons freshly grated white onion
  • 1/3 cup cider vinegar
  • 1 cup vegetable oil
  • 1 tablespoon poppy seeds

Directions
  1. Place turkey and mango cubes in a large bowl.
  2. Cut orange sections in half then add to turkey mixture.
  3. Sprinkle avocado with lime juice and add to bowl along with kiwi slices.
  4. Combine all dressing ingredients in jar then shake well and chill before serving.
  5. Pour 1/2 cup or more to taste of the dressing over turkey mixture then toss very lightly.
  6. Mound on serving platter covered with spinach.
  7. Garnish with star fruit slices and your choice of nuts.
