Citrus Poppy Seed Salad

- 1 pound deli smoked turkey thickly sliced and cut into 1/2" cubes shopping list
- 1 ripe mango peeled pitted and cut into 1/2" cubes shopping list
- 1 large navel orange peeled pith removed and sectioned shopping list
- 1 blood orange peeled pith removed and sectioned shopping list
- 1 kiwi peeled and sliced into bite size pieces shopping list
- 1 ripe avocado peeled pitted and cut into 1/2" cubes shopping list
- 1 tablespoon fresh lime juice shopping list
- Spinach shopping list
- 1 star fruit cut horizontally into 1/4" slices for garnish shopping list
- 1/2 cup toasted slivered almonds or macadamia nuts for garnish shopping list
- Dressing: shopping list
- 1/3 cup granulated sugar shopping list
- 1 teaspoon dry mustard shopping list
- 1/2 teaspoon salt shopping list
- 2 tablespoons freshly grated white onion shopping list
- 1/3 cup cider vinegar shopping list
- 1 cup vegetable oil shopping list
- 1 tablespoon poppy seeds shopping list
How to make it
- Place turkey and mango cubes in a large bowl.
- Cut orange sections in half then add to turkey mixture.
- Sprinkle avocado with lime juice and add to bowl along with kiwi slices.
- Combine all dressing ingredients in jar then shake well and chill before serving.
- Pour 1/2 cup or more to taste of the dressing over turkey mixture then toss very lightly.
- Mound on serving platter covered with spinach.
- Garnish with star fruit slices and your choice of nuts.
