White Beans With Rosemary Recipe
This is an odd recipe as it's not quite a soup and not quit anything else. We usually eat it over rice.

Ingredients
  • 3 (15 oz) cans of navy or Great Northern beans (drain and rinse two cans, save juice from one)
  • 1/2 cup chopped onion (you may want to microwave the onion for a couple minutes before adding it to make sure it is cooked through)
  • 2 cloves minced garlic
  • 1 cup shredded carrots
  • 1 1/2 teaspoons dried rosemary
  • 1 dash freshly ground pepper (or to taste)

Directions
  1. Drain and rinse 2 cans of white beans and empty into a pot. Add the entire contents of the third can to the pot.
  2. Add onions, garlic, shredded carrots and cook on medium-high heat for about 5 minutes.
  3. Add rosemary and pepper to taste.
  4. Simmer for 3-5 minutes.
  5. Serve over rice.
