Ingredients
  • 3 red sweet peppers, cut in half with stem & seeds removed
  • 2 garlic cloves, whole
  • 1 carton (32 oz.) Chicken Stock
  • 1 tsp. olive oil
  • 1 cup Arborio rice or risotto
  • 1 (10 oz.) pkg. frozen peas
  • 1/4 cup grated parmesan cheese
  • 3 tbsp. fresh chopped basil
  • 3 tbsp. fresh chopped parsley
  • 1 tbsp. lemon juice

Directions
  1. Broil peppers and garlic 15-18 mins. on cookie sheet near heat.
  2. Cool
  3. Chop peppers and mince garlic.
  4. Cook rice in oil 2 mins. on medium heat.
  5. Heat stock and add 1/2 cup every 3-4 mins. into rice until absorbed.
  6. Stir in other ingredients until heated through.

Alterations


I think this is a wonderful risotto rcp, I really like the roasted red peppers. The only thing I would change would be to add salt, and add lemon zest for the vitamins and essential oils in the peel of the lemon.
