Lous Venison Chili Recipe
This recipe is easy and draws a lot of praise. Bake a pan of cornbread to go with it.

Ingredients
  • 1 to 2 pounds ground venison.
  • ½ pound breakfast sausage. (I prefer Neece’s Hot sausage)
  • ½ sweet or Vidalia onion, diced.
  • 16oz can light red kidney beans.
  • 16oz can dark red kidney beans.
  • 16oz can diced tomatoes.
  • 1 can of Rotel Tomatoes. (I often use their Chili Fixins’ flavor)
  • 8oz can tomato sauce.
  • 1 box of Carroll Shelby’s Chili Mix.
  • 1 Jar of Pace Picante Sauce (Optional)
  • V8 Juice (Optional)

Directions
  1. Brown the ground venison and sausage together, drain and return to large pot or Dutch oven on low heat. Add the large spice pack from chili mix.
  2. Sautee diced onion and add to meat.
  3. Add kidney beans, do not drain.
  4. Add tomato sauce, diced tomatoes, Rotel, picante sauce.
  5. Add salt and cayenne pepper from chili mix as desired. I normally use only a small amount of what is provided in the mix.
  6. Thin chili as desired with V8 Juice if necessary.
  7. Simmer covered on low heat for 15 to 30 minutes or so.
