Lous Venison Chili

- 1 to 2 pounds ground venison. shopping list
- ½ pound breakfast sausage. (I prefer Neece’s hot sausage) shopping list
- ½ sweet or vidalia onion, diced. shopping list
- 16oz can light red kidney beans. shopping list
- 16oz can dark red kidney beans. shopping list
- 16oz can diced tomatoes. shopping list
- 1 can of Rotel tomatoes. (I often use their chili Fixins’ flavor) shopping list
- 8oz can tomato sauce. shopping list
- 1 box of Carroll Shelby’s chili Mix. shopping list
- 1 Jar of Pace Picante Sauce (Optional) shopping list
- V8 juice (Optional) shopping list
How to make it
- Brown the ground venison and sausage together, drain and return to large pot or Dutch oven on low heat. Add the large spice pack from chili mix.
- Sautee diced onion and add to meat.
- Add kidney beans, do not drain.
- Add tomato sauce, diced tomatoes, Rotel, picante sauce.
- Add salt and cayenne pepper from chili mix as desired. I normally use only a small amount of what is provided in the mix.
- Thin chili as desired with V8 Juice if necessary.
- Simmer covered on low heat for 15 to 30 minutes or so.
