How to make it

  • Lightly salt and pepper flank steak then spread one side with mustard.
  • To prepare stuffing heat oil in skillet then add onions and cook 3 minutes.
  • Add mushrooms and cook 5 minutes then stir in parsley, chives, tomato paste and bread crumbs.
  • Season with salt, pepper and paprika then spread stuffing on mustard side of flank steak.
  • Roll up jelly roll fashion and tie with thread or string.
  • To prepare gravy cook bacon in a Dutch oven until partially done.
  • Add meat roll and brown on all sides for approximately 10 minutes.
  • Add onions and sauté 5 minutes then pour in beef broth and cover then simmer 1 hour.
  • Remove meat to a preheated platter and season pan juices with mustard.
  • Season with salt and pepper then stir in chili sauce and serve gravy on the side.
