Mushroom Stuffed Flank Steak

- 1/2 teaspoon salt shopping list
- 1/2 teaspoon white pepper shopping list
- 2 pound flank steak shopping list
- 1 teaspoon spicy mustard shopping list
- Stuffing: shopping list
- 2 tablespoons vegetable oil shopping list
- 1 small white onion chopped shopping list
- 4 ounces fresh mushrooms shopping list
- 1/2 cup chopped fresh parsley shopping list
- 2 tablespoons chopped chives shopping list
- 1 tablespoon tomato paste shopping list
- 1/2 cup dried bread crumbs shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- 1 teaspoon paprika shopping list
- Gravy: shopping list
- 3 bacon strips cubed shopping list
- 2 small white onions finely chopped shopping list
- 1 cup hot beef broth shopping list
- 1 teaspoon spicy mustard shopping list
- 2 tablespoons chili sauce shopping list
How to make it
- Lightly salt and pepper flank steak then spread one side with mustard.
- To prepare stuffing heat oil in skillet then add onions and cook 3 minutes.
- Add mushrooms and cook 5 minutes then stir in parsley, chives, tomato paste and bread crumbs.
- Season with salt, pepper and paprika then spread stuffing on mustard side of flank steak.
- Roll up jelly roll fashion and tie with thread or string.
- To prepare gravy cook bacon in a Dutch oven until partially done.
- Add meat roll and brown on all sides for approximately 10 minutes.
- Add onions and sauté 5 minutes then pour in beef broth and cover then simmer 1 hour.
- Remove meat to a preheated platter and season pan juices with mustard.
- Season with salt and pepper then stir in chili sauce and serve gravy on the side.
