Mushroom Stuffed Flank Steak Recipe
MUSHROOM STUFFED FLANK STEAK This recipe came from an estate sale. I obtained it when I purchased the family collection from the Montgomery Estate in Crawford, Texas in 1981.

Ingredients
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 2 pound flank steak
  • 1 teaspoon spicy mustard
  • Stuffing:
  • 2 tablespoons vegetable Oil
  • 1 small white onion chopped
  • 4 ounces fresh mushrooms
  • 1/2 cup chopped fresh parsley
  • 2 tablespoons chopped chives
  • 1 tablespoon tomato paste
  • 1/2 cup dried bread crumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • Gravy:
  • 3 bacon strips cubed
  • 2 small white onions finely chopped
  • 1 cup hot beef broth
  • 1 teaspoon spicy mustard
  • 2 tablespoons chili sauce

Directions
  1. Lightly salt and pepper flank steak then spread one side with mustard.
  2. To prepare stuffing heat oil in skillet then add onions and cook 3 minutes.
  3. Add mushrooms and cook 5 minutes then stir in parsley, chives, tomato paste and bread crumbs.
  4. Season with salt, pepper and paprika then spread stuffing on mustard side of flank steak.
  5. Roll up jelly roll fashion and tie with thread or string.
  6. To prepare gravy cook bacon in a Dutch oven until partially done.
  7. Add meat roll and brown on all sides for approximately 10 minutes.
  8. Add onions and sauté 5 minutes then pour in beef broth and cover then simmer 1 hour.
  9. Remove meat to a preheated platter and season pan juices with mustard.
  10. Season with salt and pepper then stir in chili sauce and serve gravy on the side.
