Beef Tenderloin Steaks With Mushroom Sauce Recipe
BEEF TENDERLOIN STEAKS WITH MUSHROOM SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Morgan Estate in Austin, Texas in 1982.

Ingredients
  • 4 beef tenderloin steaks
  • 1/2 teaspoon salt
  • 1/2 teaspoon coarsely ground black pepper
  • 1 clove garlic minced
  • 1/4 cup white onion finely chopped
  • 1 cup fresh mushrooms sliced
  • 1 tablespoon flour
  • 1 tablespoon butter
  • 3 tablespoon red wine vinegar
  • 1/2 teaspoon instant beef bouillon

Directions
  1. In skillet over medium high heat in 1 tablespoon of the oil cook steaks 5 minutes per side.
  2. Sprinkle with salt and pepper then remove steaks to 4 warmed dinner plates and keep warm.
  3. In a cup using your fingers blend flour and butter to form a paste.
  4. Add 1 tablespoon oil to the drippings remaining in the skillet,
  5. Sauté mushrooms, onion and garlic until lightly browned about 5 minutes.
  6. Stir in red wine vinegar, bouillon and 3/4 cup water then heat to boiling.
  7. Reduce heat to low and simmer 3 minutes longer then stir in butter flour mixture.
  8. Heat and stir until mixture thickens then spoon sauce over steaks and serve.
