Sauteed Turkey Scallopini

- 1 1/4 cups dei-glaze or "Brown" sauce shopping list
- 4 ounces of Madeira shopping list
- 1 1/2 pounds bonesless turkey breast shopping list
- 16 shitake mushrooms shopping list
- 2 to 3 ounces clarrified butter or oil shopping list
- salt and pepp to taste shopping list
- 4T flour shopping list
- 4 T shredded white cheddar or parm cheese or a good romano. shopping list
How to make it
- * If you're making your own Demi-glaze, prepare before hand. Or use some from a local gourmet store.*
- Heat Demi-glaze.
- Add 1/2 the Madeira and simmer.
- Skim surface; cover and set aside.
- Slice turkey into very thin slices. Appx. 1/8" x 2"x2"
- Pound turkey with mallet to thin and tenderize. Refridgerate til use.
- Remove tough part o stems on mushrooms. Wash. Slice thinly.
- Mix flour with salt and pepper.
- Just before serving, heat 2 10" sautee pans on high heat.
- Dip turkey into flour mix. Place oil in each skillet and sautee turkey.
- When the edges brown, flip the turkey.
- Add Shitakes. Saute.
- Degrease pans.
- Deglaze with remaining Madeira and add the sauce.
- Serve immediately with cheese on top.
