Sauteed Turkey Scallopini Recipe

Ingredients
  • 1 1/4 cups dei-glaze or "Brown" sauce
  • 4 ounces of Madeira
  • 1 1/2 pounds bonesless turkey breast
  • 16 shitake mushrooms
  • 2 to 3 ounces clarrified butter or oil
  • salt and pepp to taste
  • 4T flour
  • 4 T shredded white cheddar or parm cheese or a good romano.

Directions
  1. * If you're making your own Demi-glaze, prepare before hand. Or use some from a local gourmet store.*
  2. Heat Demi-glaze.
  3. Add 1/2 the Madeira and simmer.
  4. Skim surface; cover and set aside.
  5. Slice turkey into very thin slices. Appx. 1/8" x 2"x2"
  6. Pound turkey with mallet to thin and tenderize. Refridgerate til use.
  7. Remove tough part o stems on mushrooms. Wash. Slice thinly.
  8. Mix flour with salt and pepper.
  9. Just before serving, heat 2 10" sautee pans on high heat.
  10. Dip turkey into flour mix. Place oil in each skillet and sautee turkey.
  11. When the edges brown, flip the turkey.
  12. Add Shitakes. Saute.
  13. Degrease pans.
  14. Deglaze with remaining Madeira and add the sauce.
  15. Serve immediately with cheese on top.
