How to make it

  • * If you're making your own Demi-glaze, prepare before hand. Or use some from a local gourmet store.*
  • Heat Demi-glaze.
  • Add 1/2 the Madeira and simmer.
  • Skim surface; cover and set aside.
  • Slice turkey into very thin slices. Appx. 1/8" x 2"x2"
  • Pound turkey with mallet to thin and tenderize. Refridgerate til use.
  • Remove tough part o stems on mushrooms. Wash. Slice thinly.
  • Mix flour with salt and pepper.
  • Just before serving, heat 2 10" sautee pans on high heat.
  • Dip turkey into flour mix. Place oil in each skillet and sautee turkey.
  • When the edges brown, flip the turkey.
  • Add Shitakes. Saute.
  • Degrease pans.
  • Deglaze with remaining Madeira and add the sauce.
  • Serve immediately with cheese on top.
