This is a hearty pasta, beans & sausage dish that I found in a Faith Fairchild Mystery, "The Body in the Bonfire". It is very rich & hearty, great for a cold dreary day, yet easy to cook; its a matter of just putting all the ingredients together.

Ingredients
  • 1 T olive oil
  • 1 med yellow onion, diced
  • 2 med carrots, diced
  • 1 rib of celery, diced
  • 1 large garlic clove, peeled & diced
  • 2 c canned diced tomatoes with juice
  • 4 c chicken broth, canned or homemade
  • 1/2 lb chorizo or other cooked sausage sliced into 1/2" rounds
  • 1 c cooked & rinsed (if canned) cannellini or other white beans
  • 1/2 c ditalini or other short tubular pasta
  • Salt and freshly ground pepper to taste
  • 2 T fresh basil leaves, minced
  • 2 T fresh parsley leaves, minced
  • 2 T grated Parmesan, Romano, or combination of these cheeses

Directions
  1. Heat the olive oil in a heavy saucepan or stockpot.
  2. Add the onion, carrots, celery & garlic.
  3. Stir & cook over medium heat until the onion is soft, ~ 2 - 3 minutes.
  4. Add the tomatoes & broth (if you can find these without salt or MSG, its preferable).
  5. Bring the mixture to a boil.
  6. Add the sausage rounds.
  7. Reduce the heat, cover, and simmer for 20 minutes.
  8. Add the beans & pasta & cook, stirring often, until the pasta is done, ~ 10 minutes.
  9. Season to taste with salt & pepper, remembering that the sausage may be salty.
  10. Add the basil & parsley.
  11. Serve with a sprinkling of cheese.
  12. PS: You can prepare this ahead of time, stopping before adding the beans & pasta; add those & the rest of the ingredients shortly before serving.

This is my very favorite soup i love it so i will try it with the sausage i usually put ground beef in it lol
