Spinach Cornbread Casserole

- 2 cups + 3T milk shopping list
- 9 oz cornmeal; (250 grams) shopping list
- 6 oz grated Kasseri cheese; (175 grams) shopping list
- 6 oz crumbled Feta cheese; (175 grams) shopping list
- 4 oz spinach; cooked and drained shopping list
- 1/4 cup butter shopping list
- 3 eggs shopping list
- salt and pepper; to taste shopping list
How to make it
- Add the cornmeal to the milk slowly in a saucepan on medium heat, stirring until the mixture is thickened.
- When thickened, remove from the heat, add the butter and cheeses, the spinach and some salt and pepper.
- Beat the eggs and add to mixture, combining well.
- Pour mixture into a greased and floured oven pan and bake at 180°C for about an hour.
