  • 4 thick pork loin chops
  • 1 tsp butter
  • Apple Stuffing
  • ----------------
  • 1 medium apple, with skin finely chopped
  • 1 small onion, minced
  • 1 stalk celery, minced
  • 1 clove garlic, smashed
  • 1/2 tsp fresh ginger root, minced
  • 1 tbsp olive oil
  • 1/4 cup raisins, chopped
  • 2 slices bread grated for crumbs
  • Pork Rub
  • ----------------
  • 1 tsp salt
  • 1 tsp lemon pepper
  • 1 tsp sage

Directions
  1. Preheat oven to 350.
  2. Wash the pork chops and pat well dry with a paper towel.
  3. Carefully cut a slit in one side of the chop to make the pocket for the stuffing.
  4. Spread a little butter on top of the chop then rub the pork seasonings onto the chops and let them sit.
  5. Saute the the onion, celery, garlic and ginger until slightly tender. Add the apples and raisins, and turn the heat down a bit and simmer out the water from the apples for about 10 minutes. Let cool slightly.
  6. Mix sauteed fruit and vegetables with the bread crumbs.
  7. Bake pork chops in a shallow oven proof dish for about 30 - 40 minutes. If the chops are firm to the touch they are good to go.
