Asparagus Bundles With Melted Brie Recipe
ASPARAGUS BUNDLES WITH MELTED BRIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Almond Estate in Grand Prairie, Texas in 1992.

Ingredients
  • 18 spears asparagus trimmed
  • 6 green onion green leaves about 6” long
  • 1 tablespoon unsalted butter
  • 1/4 cup dried bread crumbs
  • 2 tablespoons sesame seeds
  • 6 thin slices brie cheese
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Directions
  1. Preheat oven to 350 then cook asparagus in large pot of salted boiling water for 3 minutes.
  2. Transfer to colander and drain well.
  3. Add green onion leaves to boiling water and cook 30 minutes.
  4. Drain in colander and rinse under cold running water to stop cooking.
  5. In small skillet melt butter over medium heat then add bread crumbs and sesame seeds.
  6. Sauté unto browned about 2 minutes.
  7. Arrange asparagus in 6 bundles and tie each bundle together with green onion leaf.
  8. Arrange asparagus bundles in shallow baking dish then place 1 slice brie on top of each bundle.
  9. Sprinkle each bundle equally with bread crumb mixture then bake 6 minutes.
  10. Sprinkle with salt and pepper and serve immediately.
